Meal Prepping: I Took a Short-Cut...

Good Morning my Sweet Friends! I hope you all have had a fabulous weekend.

Guess what its still summer shredding... and I was craving salad like crazy. I don't know about you but I hate making salad at home because I feel like I have to buy a MILLION ingredients and they usually go bad before I can use them. So, I had an idea:

Jason's Deli has a salad bar... and if I do the to-go salad bar I can make a HUGE salad and portion it at home.

So that's what I did! Ha :) hey if you are not taking short-cuts you're not doing it right!

Let's get to it. Here is what I picked up from HEB!

  • Gum

  • Powercrunch Bars

  • Carrots

  • Strawberries

  • Blackberries

  • Eggs

  • Greek Yogurt

  • Water

  • Almond Milk

  • Canned Pineapple

  • Egg whites

  • Chicken

  • Frozen stir-fry veggies

  • Salt and Pepper Cashews (SO GOOD)

  • Onion

  • Lemon

  • Bananas

  • And my Jason's Deli Salad, which has: romaine, spinach, eggs, bell peppers, carrots, broccoli, cucumber, this delicious corn salsa on the side and this cranberry mix.

So here are what are meals will be:

Breakfast: An egg, egg whites, and maple turkey bacon (Dude! This is so good! 1 huge slice is 5 grams of protein with only 2 carbs!)

Snack: Fruit/cashews/powercrunch bar/ peanut butter/greek yogurt/etc

Lunch: Salad with shredded chicken

Dinner: Chicken and Veggie Stir-fry

  1. First, I took chicken and threw it in the crock pot by itself,till it fell a part to be shredded chicken. (I am adding this to my salad)

  2. Then, I washed all my fruit and prepped it and my veggies.

  3. I put olive oil in a pan and added fresh garlic, then onion, then pineapple, and various seasonings.

  4. I threw in my veggies.

  5. Then the chicken, which was cut into small pieces.

  6. And finally, coconut aminos (soy-free soy sauce) I talked about this in this post.

  7. Portion everything out and clean up. Done! :)

So incredibly fast and easy! Eating healthy can be fun! Look at all those different colors! As always, let me know if you guys have any questions. You've got this! Just keep swimming :)
