Meal Prep: Goulash??

Happy Sunday Everyone!
So, it’s Sunday, you want to know what to meal prep? Don’t worry I’ve got you!
First, here is what we picked up from the grocery store.

Gum
Powercruch Bars
Salt and Pepper Cashews
Garlic
Cucumbers
Broccoli and Carrot Mix
Strawberries
Blueberries
2 lbs of chicken
2 packages of maple turkey bacon
1 lb of ground turkey
Eggs
Greek Yogurt
Rice Cakes
Paper Towels
Coffee Creamer
So what are we making?
Breakfast: Eggs and bacon
Lunch: Turkey taco meat and veggies
Dinner: Salsa Chicken, topped with melted cream cheese, and a side of cucumbers
Fun fact: I wasn’t planning to make taco meat. I actually wanted to make something similar to what I used to eat as a kid. Goulash. I know it sounds so strange. My mum’s side of the family is Norwegian and Polish, I guess it’s a European thing? Basically it’s ground beef, elbow macaroni and tomato juice. And it’s SO good. I was going to make it with ground turkey and some of the brown rice pasta I had on hand but I forgot the tomato juice… oopsie. Next time!
So, another easy week of meal prep.
First thing I did was put my chicken in a crock pot with a bit of onion and garlic. When that was halfway done cooking I threw in some basic salsa.
While that was cooking, I added garlic, onion and olive oil to a pan and then some ground turkey. I browned the turkey and then added 3 tablespoons of taco mix seasoning and ⅓ cup of water. I covered the mixture with a lid and let it simmer on low.
While this was cooking I steamed my veggies and prepped my berries and cucumber.
Then I portioned everything and cleaned up. Done.

Side note: with the salsa chicken I will add a serving on top when I am ready to throw it in the microwave. May not be the healthiest thing but with low carb I get more fats so hey :)
