Stir Fry Lettuce Wraps and...

Good Morning Sweet Friends!

After what seems like forever I have brought you another meal prep!

Today we will be making stir fry lettuce wraps and grilled turkey bratwurst and veggies.

I got a new indoor grill recently. This was the first time I got to use it. I love it so far! Let me know if you would like to see a review :)

Here is what we picked up from the grocery store:

  • Ground Chicken

  • Turkey Bratwursts

  • Eggs

  • Baggies

  • Bell peppers

  • Onion

  • Lemons

  • Bananas

  • Apples

  • Romaine Wraps

  • Iced Coffee

  • Greek Yogurt

  • Apples and Cinnamon Instant Oatmeal (I have been craving this like crazy so I gave in)

  • Central Market Sweet Potato Chips

  • Not Pictured (as I already had them on hand):

  • ​Canned Pineapple Chunks in 100% Juice

  • Frozen Stir Fry Veggies

  • Coconut Aminos

  • Garlic

  • Peanut Butter

Here will be our meals for the next few days:

Breakfast: Eggs whites and oats

Lunch: Stir Fry Lettuce Wraps

Dinner: Grilled turkey bratwurst and veggies

Snacks: Apples and Peanut Butter, Bananas, Greek Yogurt, Central Market Sweet Potato Chips

Let's get to it!

The first thing I did was put a bit of olive oil in a pan with some garlic. Then, I added my ground chicken and cooked it through. While this was cooking I popped a bag of frozen stir fry vegetables in the microwave to defrost. I also drained a can of pineapple chunks. Once the chicken was done, I turned my pan to high heat and added the veggies and pineapple. I also added some garlic seasoning and 1/3 cup of coconut aminos and cooked the mixture for a few minutes.

As the stir fry was cooking, I washed and cut up my bell peppers and onion and threw them on the grill. The bell peppers took about 10 minutes and the onions took about 5 minutes. Then I threw on my bratwurst for about 20 minutes. After, I took them off the grill and allowed the meat to "rest". Next, I sliced them into smaller pieces.

Done! That easy. With the stir fry mixture I will scoop the mixture onto lettuce wraps and I will most likely add mustard to my bratwursts. If I need more carbs for that day I will place my grilled meat and veggies on a bed of brown rice. :)
