A Less Formal Meal Prep

Hello My Sweet Friends!
Today I am bringing you another meal prep but less formal. This week is going to be spicy...
Here is what I picked up from the grocery store:

Cucumbers
Strawberries
Blueberries
Shredded Lettuce
Tortillas
Popcorn
Brown Rice
Salted Rice Cakes
Oats
Salsa Verde
Pico de Gallo
Sour Cream
Limes
Black Beans
Ground Turkey
Tilapia (I got this in bulk at Sam's)
Complete Cookies
Can we notice a theme here??
Breakfast: Breakfast Tacos
Lunch: Taco Salad
Dinner: Copy Cat Wahoo's Taco Bowls (Wahoo's is a California Chain... like Chipotle but fish)
Snacks: Berries, rice cakes with peanut butter, complete cookies, popcorn, cucumbers
Disclaimer: I was really bad about taking pictures this week and I am very sorry about that! Please bare with me. I will explain how I did it tho!
Breakfast Tacos: Add egg whites to a skillet and scramble. Half-way through cooking, add pico, beans, and any other toppings you like. Warm your tortilla to your liking and top it will the egg filling, salsa and sour cream. This is so good!
Taco Salad: Brown your ground turkey in a pan with garlic and taco seasoning. Pile up shredded lettuce, taco meat, black beans, pico, salsa, sour cream, and anything else you would like. You could add tortilla chips but I chose not to.
Wahoo Bowl: I was craving one of these bad boys like crazy! I figured I could make one at home. Let me tell you, this came out so good! I pan fried my tilapia and seasoned it with Chef Paul Prudhomme's Seafood Magic Seasoning, Lawry's Garlic Salt and fresh lime juice. I also put some butter on the fish.. opps! Then, in a bowl I put in some shredded lettuce, black beans, brown rice, pico, a little bit of cheese, and topped it with my fish and some more fresh lime and sour cream. So so good! Packed with flavor.


As you can see, all of these meals include many of the same ingredients which make things super easy!
Again, I apologize for the lack of pictures. You can totally change any of these to fit your taste!
