Grilling and Taco Soup!

Happy Fall Guys!

I don't know about you but I LOVE soup! But sometimes it can be super easy to make soups unhealthy. Today, I am going to share with you a taco soup recipe that is SO healthy a HUGE hit and relatively healthy.

Here is what I picked up from the store:

  • Greek Yogurt

  • Eggs

  • Cheese

  • Ground turkey

  • Nutella

  • PB

  • Graham Crackers

  • Rice Cakes

  • Oats

  • Complete cookies

  • Batteries

  • Onion

  • Lemons

  • Zucchininni

  • Cucumbers

  • Strawberries

  • Balsamic Vinegar

  • Canned:

  • Corn

  • Kidney Beans

  • Tomato Sauce

  • Pumpkin

Breakfast: eggs and oats

Lunch: taco soup

Dinner: grilled balsamic vinaigrette chicken and zucchini

First thing, I made the taco soup which you will make in a slow cooker, heck yeah! All you need to do is mix the following ingredients. Note I did double the recipe, so use two of everything if you choose to do the same: ground turkey, chopped onion, tomato sauce, chili style tomatoes, drained and rinsed kidney beans and corn, a package of taco seasoning mix. Throw all of this in the crock pot and mix. Let it cook on high for 4 hours. You can top this with a bit of plain Greek yogurt and cheese. SO good!

Then, I pull out my chicken to defrost. Once it was defrosted I put it in a bowl with my zucchini and marinaded them in some balsamic vinegar, garlic, and garlic pepper. Then I simply grilled them until cooked. So good and so easy!

Eating healthy and meal prepping can be so easy! I promise! Just a little thought and pre-planning and you can make anything.
