Cranberry Almond Chicken Salad!?

Happy Sunday!

I don't know about you all but I was sure ready for the weekend!

This week we will be making:

Breakfast: Egg whites and oats

Lunch: Chicken and Veggies Stir-fry

Dinner: Homemade version of the Costco Greek Yogurt Cranberry Almond Chicken Salad

Snacks: same things haha

Here is what I picked up! Which is a lot...

  • Greek Yogurt plain and vanilla bean

  • Eggs

  • Almond Milk

  • Ground Chicken

  • Peanut butter

  • Salsa

  • Apple Cider Vinegar

  • Coconut Aminos

  • Frozen cranberries

  • Frozen Green Smoothie Blendables

  • Frozen Stir-fry veggies

  • Spinach

  • Cucumbers

  • Apples

  • Bananas

  • Strawberries

  • Coffee

  • Oats

  • Rice Cakes

  • Wheat thins

  • Almonds

  • Complete Cookies

  • Limeade True Lemon Packets

SO! Yes, I made stir-fry again! Check last weeks meal prep blog to see how I did it. Its SO good you guys. Quick and cheap to make too!

But... we did make something a little more creative this week. I'm not sure if you are aware but Costco has these Cranberry Almond Chicken Salad cups made with Greek Yogurt. They are SO yummy, guilt free and macro-friendly. The sad thing is, I don't have a Costco near me and Sam's makes one similar but without Greek Yogurt and it is NOT macro-friendly. So... I figured it couldn't be too difficult to make at home and I was right. So here we go!

First thing I did was cook 2 pounds of chicken in a crock pot and shredded it. Then, let this cool!

While this was cooking, I made the rest of the salad. Take three cups of plain Greek yogurt, 3 tablespoons of apple cider vinegar, 1 cup of defrosted and smushed cranberries, 1/2 cup of diced apple (this is not in Costco's recipe but I forgot celery :( ), 4 ounces of chopped almonds, 2 teaspoons of garlic, 1 teaspoon of garlic powder, 1/2 teaspoon of pepper, 1 tablespoon of sugar and mix all of these in a bowl. Once, your chicken is cool and shredded, add this to your mixture and stir. Eat alone or serve on crackers. SO good! I would highly recommend adding the celery, I just forgot to. It doesn't taste exactly the same but it is still super yummy :)
