Things are getting SPICY :)

Good Morning Everyone! Happy Sunday!

Today we are doing a spicy meal prep... "Mexican" style if you will. But healthy of course!

On our menu we have:

Breakfast: you can guess this!

Lunch: Taco bowls

Dinner: Roasted Salsa Slow Cooker Chicken and Fajita Veggies

Here is what I picked up from the store.

  • Eggs

  • Almond Milk

  • Pinto Beans

  • Roasted Salsa

  • Coffee

  • Strawberries

  • String Cheese

  • Ground Turkey

  • Bacon

  • Greek Yogurt

  • Gum

  • Double Protein English Muffins

  • Complete Cookies

  • Bell Peppers

  • Onion

  • Lemons

  • Cucumbers

  • Brown Rice

Let's get to it! Here is what I have laid out.

May not look like much and it isn't because its so simple.

So, first thing. I threw chicken in the crock pot with this super yummy roasted salsa and cooked till it started to fall apart.

Then I chopped up all my produce.

In a pan, I put some olive oil and garlic. Then, I added my peppers and onion and let this cook till caramelized.

In another pan, I cooked my ground turkey.

And then portioned everything out!

For one meal, serve your crock pot chicken with the fajita veggies.

For the taco bowls, use ground turkey, beans, rice and a little bit of salsa!

So good. So quick and little clean up! Can you say winning?

Here is what I ended up with :) beautiful!

Never let life's craziness be an excuse to knock you off your game. Keep it simple stupid ;) have a great week my warriors!
